Ingredients:


2 big handful of tomatoes

2tbsp olive oil

a bunch of fresh herbs   (thyme, oregano, basil, parsley, chives..)

optional: fresh vegetables of your choice and availability

salt and pepper to taste


Directions:


  1. Cover the baking tray with parchment paper.


  2. Rinse and coarsely chop larger tomatoes, keep cherry tomatoes whole, and place them on the baking tray.


  3. Add any desired herbs and other vegetables like celery or zucchini.


  4. Drizzle the tomatoes and herbs with olive oil, salt, and pepper. Gently mix everything. Ensure the herbs are covered by the tomatoes to prevent burning and allow them to cook between the tomatoes.


  5. Place the tray in the oven and roast the tomatoes at 380°F (190°C) for about 1 hour. The longer you cook them, the more the liquid will reduce.


  6. Process the roasted tomatoes through a food mill. Alternatively, you can use a blender or hand mixer, but be sure to remove any tough herb stems.


Enjoy it with pasta, as a pizza sauce or preserve it for future use.
